Steps to Make Urad Dal
1) Rinse and Cook
Empty the dal into a bowl and rinse it with the tap water till the water becomes clear. Now, in a pressure cooker, add dal, 3 cups of water, turmeric powder, chopped tomatoes and salt. And then cook for a minimum of 4 whistles.
2) Prepare the Tadka
When the dal is boiling, you can prepare the tadka. Add ghee/mustard oil/olive oil into a hot pan. Then add cumin seeds, bay leaf, ginger-garlic paste, freshly chopped onions, coriander powder, asafoetida powder, garam masala and chilli powder.
Fry until the onion turns transparent and brown in colour.
3) Boiling on Low Heat
After the dal is completely cooked, pour it inside a thick-bottomed pan. Put the tadka on top, mix it well and allow it to cook on a low heat for at least 10 minutes. Adjust the salt as needed. Garnish with coriander leaves and serve hot with chapatti or rice. Ginger-garlic paste adds a very nice aroma to this dish.
