    Just elaichiIngredient list: green cardamom
    Description

Crack open a choti elaichi pod and that sweet, floral aroma gets to work. Drop it into chai, simmer it with kheer, or grind the seeds for phirni and cakes. Whole pods let you choose how much to release. The kettle hasn't finished boiling, and the kitchen already smells inviting.

    About its origins

The green cardamom belt runs through the Western Ghats, including Idukki in Kerala. Chhoti elaichi is loved for its sweet, fresh aroma in chai, kheer and biryani.

Crack the pod. Chai will thank you.

    How to use
    1. Lightly crack the pods before adding them to chai, rice or a simmering gravy.
    2. Open the pods and grind the seeds finely when making desserts that need a smooth texture.
    3. Strain tea and remove whole pods from dishes before serving when practical.

Quick tip: For a small amount of cardamom powder for sweets, grind the seeds with a little sugar taken from the recipe.

    Use it in

    • Elaichi chai and flavoured milk
    • Kheer, phirni and rabri
    • Halwa, barfi and sweet fillings
    • Biryani and fragrant pulao
    Ingredients & storage

    IngredientsGreen cardamom (Elettaria cardamomum).

What it containsGreen cardamom seeds naturally contain aromatic oil, including 1,8-cineole and alpha-terpinyl acetate. The balance of these compounds contributes to the spice’s aroma and varies between crops.

StorageStore airtight in a cool, dry place. Keep the pack closed between uses and use a dry spoon.

    Questions about our lab results

    What does lab tested mean?
The report names the product sample, the checks carried out and the result of each check. Different products need different tests, so the full report tells you exactly what was covered.
What does below quantification limit mean?
It means the amount was below the level the test could reliably measure as a number. It does not mean zero. The report gives the test’s limit.
What does volatile oil tell me?
Volatile oils contribute to a spice’s aroma. This test measures the oil content; it is one quality measure alongside the other checks in the report.
    Why is moisture checked?
Moisture is the water present in the sample. Measuring it helps assess the product’s condition and suitability for storage. It is not a shelf-life guarantee.
Are curcumin and curcuminoids the same?
Curcuminoids are a group of compounds that includes curcumin and contributes to turmeric’s colour. A curcuminoid result should not be presented as a separate curcumin result.

    Product FAQs

A few things you may want to know

Still have a question? Talk to us.
Do I use the whole pod or just the seeds?

Use lightly cracked pods to infuse tea or rice. For a smooth dessert, open the pods and grind only the seeds finely.

When should I add cardamom to chai?

Add a lightly cracked pod while the tea simmers so its aroma infuses. Strain the tea before serving to remove the pod and leaves.

Can green cardamom go into savoury food?

Yes. Whole pods are used in pulao, biryani and some gravies. Start with a little so the sweet fragrance stays in balance.

Is green cardamom interchangeable with black cardamom?

They have different flavour profiles. Green cardamom is sweetly fragrant, while black cardamom is smoky; use the one named in your recipe.

How can I avoid cardamom pieces in kheer?

Open the pods and grind the seeds finely before adding them. Alternatively, infuse whole pods in the milk and remove them before serving.

    How spicy is it?

Green cardamom adds fragrance and sweet spice flavour without chilli heat, in both sweets and savoury dishes.
