    Description

Whole spices let their aroma unfold slowly through your biryani. Bloom a little of this blend in ghee before building the base, or use a spice potli as your recipe directs. It works beautifully in pulao too. The rice does the carrying; the spices give every layer something to say.

Bloom it in ghee. The rice carries the rest.

    How to use
    1. Add the whole-spice mix to hot oil or ghee before cooking the onions and other ingredients.
    2. For a removable spice infusion, secure the mix in a food-safe muslin pouch and add while cooking.
    3. Remove the pouch or larger whole pieces before serving, as your recipe requires.

Quick tip: Keep the heat moderate when blooming whole spices. Fragrant is the aim, not dark or scorched.

    Product FAQs

A few things you may want to know

Still have a question? Talk to us.
How is this different from Shahi Biryani Masala?

This product contains a mix in whole-spice form. The ground version mixes into marinades and masala bases; choose the form that your recipe calls for.

Do I need to grind the spices?

You can use the mix whole for tempering or infusing rice. If your recipe needs a powder, cool any toasted spices before grinding them.

How can I avoid biting into whole spices?

Tie the mix securely in a food-safe muslin pouch for recipes that allow an infusion. Remove the pouch before serving, or pick out larger pieces from the finished dish.

Can I use this for pulao?

Yes. Add the spices near the start, usually to hot ghee or oil, then continue with your rice and vegetables so their aroma carries through the dish.

At what point should I add the whole spices?

For a tempered base, add them to hot ghee or oil before the onions. For a pouch infusion, add the secured pouch with the cooking liquid.

    How spicy is it?

Whole spices add flavour as they cook; the quantity used and other biryani ingredients determine the final spice level.
