01. Butter Chicken Spaghetti

She made butter chicken for you a hundred times. This is your version of it.

Protein: Chicken, paneer, or mushroom

Make it:

1.  Boil spaghetti. Save half a cup of pasta water before draining.

Make it:

1.  Marinate paneer in ZOFF Tikka Marinade for 10 minutes.

2.  Cook on a hot tawa until charred at the edges. Cube or crumble it.

3.  Build the bhaji base with ZOFF Pav Bhaji Masala, onion, tomato, capsicum.

4.  Add the tikka paneer into the bhaji. Mix and mash lightly.

5.  Butter. Lemon. Raw onion. Toast the pav in the same pan.

The char on the paneer is what changes everything. Do not skip it.

03. Tikka Rice Bowl

She has never eaten a rice bowl made for her. Be the first.

Protein: Paneer or chicken

Make it:

1.  Marinate chicken in Tikka Marinade for 10 minutes.

2.  Cook on a tawa with oil. Let it char at the edges.

3.  Steamed rice as the base. Tikka on top.

4.  Add sliced onion, cucumber, mint, a squeeze of lemon.

5.  Drizzle with yogurt. Serve in a wide bowl.

The yogurt drizzle makes it look like you planned this. You did not need to.

04. Magic Masala Pizza

She has had pizza. She has had your spices. Not like this.

Magic Masala as the pizza base spread instead of tomato sauce. Sounds wrong. Tastes right. The masala is tangy, spiced, and bold enough to hold the whole dish. Add cheese, paneer, whatever you have. Bake it. What comes out is entirely Indian and entirely unexpected.

Time: 15 minutes

Base: Store-bought pizza base, naan, or thick roti

Protein: Paneer, vegetables, or leftover chicken

Make it:

1.  Spread Magic Masala on the base as you would tomato sauce.

2.  Add cheese. Any melting variety works.

3.  Top with paneer, sliced onion, capsicum, chilli flakes.

4.  Bake at 200 degrees for 10 minutes until the cheese is golden.

05. Mutton Masala Pasta

3.  Loosen with pasta water to a proper sauce consistency.

4.  Toss in pasta. Mix until fully coated.

5.  Top with crispy fried onions and fresh mint.
The crispy fried onions are not a garnish. They are the dish.

06. High-Protein Shredded Paneer Pav Bhaji

She always made sure you ate enough. Return the energy.

Pav bhaji, but shredded paneer goes into the base instead of the usual aloo. It absorbs the spice completely. You cannot tell the difference until you feel how much more filling it is. She will notice. She will ask what you did. Tell her it is for her.

Time: 20 minutes

Protein: 100g paneer per person, shredded

Make it:

1.  Build the bhaji base with ZOFF masala, onion, tomato, capsicum.

2.  Shred paneer directly into the bhaji. Mix well.

3.  Let it cook together for 3 minutes.

4.  Butter, lemon, raw onion on top.

5.  Toast the pav in the same pan. Do not skip the butter on the pav.
Shredded paneer looks exactly like pulled meat. Nobody needs to know otherwise.

07. Magic Masala Sandwich

She made you a hundred sandwiches growing up. This one is hers.

Magic Masala mixed with thick curd becomes a spread that improves every sandwich it touches. Five minutes. No cooking. And the flavour is completely, recognisably hers, just in a format she never made for herself. That is the whole move.

Time: 5 minutes

Works on: Any bread, roti, or wrap

Make it:

1.  Mix 2 teaspoons of Magic Masala with 3 tablespoons of thick curd.

2.  Add chilli flakes and a squeeze of lemon.

3.  Spread on bread. Add cucumber, tomato, any protein you have.

4.  Grill if you want it warm.

5.  Make extra. It keeps for three days and makes everything better.
This is the five-minute dish that makes her feel the most looked after. Do not underestimate it.
