Tandoori Momos at Home: The Spices Behind This Indo-Tibetan Favourite
Share
Walk past any momo stall in Delhi, Kolkata or Raipur after 7 pm and you'll see the same thing. The plain steamed plates sell steadily, but the queue forms at the tandoor: charred edges, a smoky red coat, a squeeze of lemon on top. That's the tandoori momo, and you can make it at home once you know which spices do the heavy lifting.
Momos are a mainstream snack now. Chicken momos were the second most-ordered snack on Swiggy in 2024, with 1.63 million orders, just behind the chicken roll. Wow! Momo passed 850 outlets in more than 95 cities in FY2025-26. The tandoori version is where Indian kitchens have made the dish their own.
What Are Tandoori Momos?
Tandoori momos are steamed dumplings that get coated in a spiced yoghurt marinade and roasted until charred, in a tandoor, oven, air fryer or pan. The dumpling comes from the Tibetan and Himalayan momo. The marinade and the cooking method come from North Indian tandoori cooking. You get a soft inside and a smoky, tangy outside.
Ingredients
Serves 3–4 (16–18 momos) | Prep 30 min | Marination 20 min | Cooking 25 min | Total ~75 min

Nutrition (approx., 8 veg tandoori momos): 350–420 kcal | 10–14 g protein | 45–55 g carbs | 10–14 g fat. The numbers change with the filling, the oil and the dough.
The Spices Behind the Flavour: A 3-Layer Framework
Most restaurant-style tandoori momos are built the same way:
| Layer | What goes in | What it does |
| Base | Hung curd, lemon, ginger-garlic, salt | Adds tang and tenderises. Helps the masala stick |
| Colour & heat | Kashmiri chilli, tandoori masala, garam masala | Gives a deep red without too much burn. Adds coriander, cumin, clove and dry ginger notes, plus warmth |
| Finishing | Kasuri methi, chaat masala, smoke | Gives the "dhaba" aroma. Most home cooks skip this layer, which is why theirs tastes "almost right" |
Roasted besan does a lot of quiet work here. It soaks up extra moisture, so the marinade chars on the momo instead of dripping off.
How to Make Tandoori Momos at Home
- Steam the momos for 10–12 minutes, then let them cool completely. Warm momos make the marinade runny.
- Whisk the marinade into a thick paste. It should coat the back of a spoon.
- Coat the momos gently and let them rest for 20 minutes.
-
Cook using one of these methods:
- Oven: 220°C for 10–12 min. Brush with oil, then grill for 2–3 min.
- Air fryer: 200°C for 8–10 min, turning once.
- Pan: medium-high heat with a little butter, 2–3 min per side.
- Smoke (optional): put a hot coal in a small bowl inside the pan, add a drop of ghee and cover for 2 minutes.
- Finish with chaat masala, lemon and sliced onions.
Tips for Restaurant-Style Tandoori Momos
- Hang the curd for at least 2 hours. Watery curd is the most common reason momos turn soggy.
- Roll the dough a little thicker than you would for steamed momos, so the skin holds up to high heat.
- Put the momos on skewers in the oven. Air reaching every side gives an even char.
- For spicy tandoori momos, add ½ tsp regular red chilli powder or some green chilli paste. Extra Kashmiri chilli adds colour, not heat.
- Leave space on the tray. Crowded momos steam instead of roasting.
Serving Suggestions
Serve them hot with mint-coriander chutney, a garlicky red chutney, or mayo mixed with a pinch of tandoori masala. Sliced onions and lemon wedges cut through the richness. For a party platter, pair them with tandoori soya chaap or paneer tikka.
Variations to Try
- Paneer tandoori momos: fill with grated paneer, onion and green chilli.
- Chicken tandoori momos: fill with minced chicken, ginger and spring onion. Cook until the filling reaches 75°C.
- Afghani momos: use cream, cashew paste and white pepper instead of the red marinade.
- Malai tandoori momos: add fresh cream and cheese to the curd for a milder coat.
- Kurkure tandoori momos: roll the marinated momos in crushed cornflakes before air frying.
