The Paneer Chilli Toast Masala: A 4-Layer Heat Framework

Most recipes just say "add chilli." The heat in this toast actually comes from four layers, and each one does a different job:

  1. Colour heat (Kashmiri chilli): deep red with a mild bite. It gives the filling its colour without being too hot.
  2. Sharp heat (green chilli): hits first and fades fast, so every bite stays lively.
  3. Warm heat (black pepper + garam masala): stays at the back of the throat and links the Indo-Chinese sauces to the Indian spices.
  4. Tang (chaat masala): sprinkled on after toasting. Its sourness cuts through the paneer and cheese.

  1. Melt butter in a pan. Sauté the garlic and green chilli for 30 seconds.

  3. Lower the flame. Add the Kashmiri chilli, black pepper and garam masala. Stir for 20–30 seconds.
  4. Add the soy sauce, chilli sauce and ketchup. Toss in the paneer and cook 1–2 minutes until coated. Mix in the spring onion greens and let the filling cool for 2 minutes.
  5. Butter the bread and toast one side golden on a tawa. Flip it, spread the filling on the toasted side, and top with cheese.
  6. Cover and cook on low for 3–4 minutes, until the cheese melts and the base is crisp. Oven: 200°C for 6–8 minutes. Air fryer: 180°C for 5 minutes.
  7. Finish with chaat masala and coriander. Cut diagonally and serve hot.
