What Is Paneer Masala? Ingredients, Spices and How to Make It

If you've ever scanned an Indian restaurant menu and wondered what actually separates "paneer masala" from a dozen other paneer curries on the list, you're not alone. It's one of the most-ordered vegetarian dishes in North Indian kitchens, and yet most people couldn't explain what makes it masala rather than, say, paneer butter masala or paneer tikka masala.

What Is Paneer Masala?

Paneer masala is a North Indian curry made with cubes of fresh paneer (Indian cottage cheese) simmered in a spiced onion-tomato gravy. Unlike the cream-heavy paneer butter masala, a classic paneer masala leans on whole and ground spices cumin, coriander, garam masala, and kasuri methi (dried fenugreek leaves) for its flavour, rather than relying on butter and cashew paste alone. The result is a curry that tastes richer and more layered than it looks, which is probably why it shows up on nearly every dhaba and home dinner table across Punjab, Delhi, and beyond.

Paneer itself has quietly become one of India's biggest food stories. The domestic paneer market was valued at roughly ₹727.68 billion in 2025 and is projected to grow at a 14.2% CAGR over the next decade, according to Expert Market Research a sign of just how central this ingredient has become to everyday Indian cooking, not just restaurant menus. Part of that growth comes down to convenience: paneer cooks fast, takes on flavour well, and gives vegetarians a protein source that doesn't need any planning ahead, unlike soaking lentils or beans.

Paneer Masala Nutrition

A 100g serving of paneer masala typically provides around 200 kcal, 20g protein, 11g fat, 6g carbohydrates, and close to 700mg calcium, along with smaller amounts of phosphorus, magnesium, and vitamin B12. That combination of high protein and high calcium is exactly why paneer masala is often recommended as a go-to vegetarian option for muscle maintenance, bone health, and general protein intake figures will shift slightly depending on how much oil, ghee, or cream goes into your version.

Ingredients and Cooking Time

Prep time: 15 minutes (plus 30 minutes marination) | Cook time: 30–35 minutes | Total: around 1 hour

For the Paneer:
-250g paneer, cubed
-½ tsp turmeric
-½ tsp red chilli powder
-¼ tsp garam masala
-1 tsp ginger-garlic paste
-salt

For the Gravy:
-2 tbsp ghee or oil
-1 bay leaf
-1-inch cinnamon
-2 cloves
-2 green cardamom
-1 tsp cumin seeds
-1 large onion, finely chopped
-1 tsp ginger-garlic paste
-2 medium tomatoes, pureed
-1 tsp coriander powder
-½ tsp turmeric
-1 tsp red chilli powder
-½ tsp garam masala
-1 tsp kasuri methi, crushed
-fresh coriander for garnish
-water as needed.

How to Make Paneer Masala

  1. Marinate the paneer cubes with turmeric, chilli powder, garam masala, ginger-garlic paste, and salt for 30 minutes.
  2. Lightly pan-fry the marinated paneer in a teaspoon of ghee until it picks up light golden edges. Set aside this step keeps the paneer from turning rubbery later.
  3. In the same pan, heat ghee and temper the whole spices (bay leaf, cinnamon, cloves, cardamom, cumin) until fragrant.
  4. Add chopped onions and sauté until golden brown this takes patience, but it's where most of the flavour actually comes from.
  5. Stir in ginger-garlic paste, then the tomato puree, and cook until the raw smell disappears and oil starts to separate at the edges.
  6. Add coriander powder, turmeric, and chilli powder; cook on low heat for a minute so the spices don't turn bitter.
  7. Pour in water to adjust consistency, bring to a simmer, then add the fried paneer.
  8. Finish with garam masala and crushed kasuri methi, simmer for 3–4 minutes, and garnish with coriander.

Tips for the Best Paneer Masala

Use fresh, soft paneer if it's store-bought and firm, soak it in warm water for 10 minutes before cooking. Don't skip the kasuri methi; it's a small ingredient that adds a distinct, slightly bitter aroma you'll immediately recognise from restaurant-style curries. Cook the onions properly rather than rushing them, and always add ground spices on low flame to avoid a burnt, chalky taste. If your gravy tastes flat even after all the right spices went in, the culprit is usually under-cooked tomatoes keep going until the oil visibly separates at the edges of the pan, that's the real sign the base is ready.

Serving Suggestions

Paneer masala pairs naturally with tandoori roti, butter naan, or jeera rice. For a lighter meal, serve it with plain steamed rice and a side of cucumber raita or sliced onions with lemon.

Variations

Try paneer masala with spinach (palak paneer masala) for an iron boost, swap the tomato base for a cashew-yogurt gravy for a richer texture, or add bell peppers and onions for a kadai-style version with a smokier, more peppery finish. Home cooks in Punjab often make a drier version with less gravy, eaten with rotis, while restaurant kitchens tend to keep it saucier so it works with both rice and naan.
