Load more piecesKitchen arguments, settled.
The odd argument we promised. Flip a card for the answer, then read the piece that proves it.
The recipe is rarely the gap.
Method and spice freshness decide most of what you taste. The biryani piece walks through where the difference really comes from.
Close cousins, not twins.
Tandoori is bone-in leg or thigh, roasted whole. Tikka is boneless and cut into chunks. The marinade overlaps; the cut and the cook do not.
The oven is half the story.
The name comes from the clay oven, but the spiced yogurt marinade and properly high heat carry most of the flavour. The recipe shows how to get close at home.
More stale spice is still stale.
Aroma lives in volatile oils that fade with heat and air. Freshly ground spice goes further, which is why ZOFF grinds cool and zip-locks every pack.
